Seco is a Peruvian stew with earthy, rich, layered flavors. "Seco" means "dry" in Spanish, though our version, and most that we've had, are saucy, making us think the origin of the name may be lost to time; thankfully the recipe has persevered. In fact, we go so crazy for its rich, flavor-packed sauce we add extra to every plate.
